Eggs contain choline which helps the brain to regulate your mood and is known to help reduce stress levels. 

Mushrooms are thought to help lift your mood, although research into this is on-going.

Parmesan is thought to help boost your mood thanks to its ability to increase your endorphins. Many other types of cheese are also thought to help. 

Serves 2-3:


  • 3 large brown mushrooms
  • 2 tablespoons of butter 
  • Olive oil
  • 3 eggs at room temperature
  • 3 tablespoons of grated Parmesan
  • Salt and pepper
  • Parsley
  • 6-9 vine tomatoes


1 – Preheat your oven to 200 Celsius. Place the vine tomatoes in a dish and drizzle the olive oil over the top. Sprinkle some salt over the tomatoes and roast them until the skins have burst open. 

2- Remove the stems from the mushrooms and set to one side. Drizzle some olive oil on an oven tray. Place the mushrooms on the tray. 

3 – Add half a teaspoon of butter to each of the mushrooms, and drizzle more olive oil on top. Place in the oven for 15 minutes or until cooked. 

4 – Now set the oven to ‘grill’ and remove the mushrooms from the oven. Break an egg into each of the mushrooms, and top with the Parmesan. Season with salt and pepper. 

5 – Place under the grill for approximately 5 minutes. Once the eggs are done, remove the mushrooms from the oven. Sprinkle with parsley and serve with the vine tomatoes. 

6 – Enjoy!

You can also top the mushrooms with a variety of vegetables, should you wish to.
