Cauliflower contains many different nutrients such as vitamins c, k, and B6 as well as potassium, magnesium, and fibre. Cauliflower also contains choline which is an essential nutrient. Choline helps the brain to produce neurotransmitters that can boost your mood, helping you to feel happier. 

Salmon has quite a lot of vitamin D in it which is thought to help reduce incidences of depression. 

Avocado is a great food to eat if you have depression. This is because it contains omega-3 fatty acids, folate, and tryptophan which help to regulate our neurotransmitters. 

Serves 2. 

  • 2 1/2 cups of finely chopped or riced cauliflower
  • 2 avocados (Pit removed)
  • 3/4 of a cup of vegetable broth 
  • 2 eggs 
  • 2 cups of fresh spinach 
  • 2 tablespoons of olive oil
  • 110-170 grams of salmon fillets
  • Salt and pepper to season


Place the avocado halves in a food processor or blender. Puree until the avocado is smooth. Set to one side.

Now place the cauliflower in a microwavable bowl and cover. Microwave for 2 minutes, remove and season with some salt and pepper. Allow to stand for 2 minutes, before adding the eggs. Stir well. 

Place a non-stick pan on a medium-high heat and add 1 tablespoon of olive oil. Now add 1/2 of the cauliflower mix. Cook the mixture (as if you were cooking a pancake) for 2 minutes on each side. Remove from the pan and set to one side. Add the remaining olive oil and cauliflower mixture. Set to one side.

Add the spinach to the pan and saute until the spinach has just started to wilt. Divide the spinach between both pancakes, placing it in the middle of each pancake. 

Add the salmon fillets to the pan and season. Cook on a medium-high heat for about 3 minutes on each side or until it’s cooked to your satisfaction. 

Once the salmon is done, place it on top of the spinach and spoon the avocado puree onto the edges of the pancake.
