If you don’t mind eating cold things when it’s cold outside, you’ll love these mood-boosting chai fudge pops!

Serves: 6

Ingredients: 

  • 1 and 1/3 cups of boiling water
  • 1 chai tea bag
  • 1/3 of a cup of slightly sweet chocolate or 1/4 of a cup of chocolate chips
  • 1/4 of a cup of honey

  • 3 tablespoons of cocoa powder (preferably unsweetened)
  • 4 ounces of softened cream cheese, cut into small chunks
  • 1 inch slice of peeled, fresh ginger

Method:

1 – Add 1 cup of boiling water, the ginger, and the tea bag to a bowl. Allow it to brew from 5 to 10 minutes.

2 – Add the rest of the water, all of the honey, cocoa powder, and chocolate to a food processor. Allow the mixture to stand for 1 minute so that the chocolate softens. Mix until very smooth. Add the cream cheese and mix again until the cream cheese has mixed nicely.

3 – Now remove the tea bag from the bowl and add the tea to the chocolate mix. Pulse together to combine.

4 – Freeze the mixture into ice lolly moulds for 6 hours or until the mixture is completely frozen. Freeze for up to 1 month.
