This blueberry, oat, and but bake can be enjoyed with milk at breakfast, however, it can also be a very nutritional snack. 

Blueberries contain a lot of folate that can help your brain to produce dopamine, serotonin, and norepinephrine. These are naturally occurring chemicals which can help to balance and regulate your mood.

Oats can help to stabilise your mood and blood sugar levels.

Serves 4.


  • 500ml of almond milk 
  • 200g of porridge oats
  • 1 beaten egg
  • 2 tbsp of almond butter
  • 1 tsp of baking powder 
  • 1 small banana, mashed 

  • 450g of blueberries
  • 1 tsp of vanilla extract
  • 30g of whole almonds, chopped


  1. Heat your oven to 200c and add all of the ingredients to a bowl. Mix well.
  2. Now tip the mixture into an ovenproof dish that can hold approximately 2 litres. Bake for 30-35 minutes, or until hot in the centre. 
  3. Serve warm with some milk, honey, or yogurt. Add extra blueberries if you wish.
